TIME!






Finally.

I know there's people who have been waiting for us to start this blog for ages!

Some of you even doubted if bananas can cook after all? :D

We're SOO sorry that it took this long but I promise- it will be worth waiting!

some of the first entries will be microwave cooking and it's basics, salads can be good and easily delicious!

....not with those titles though :D

Why now?
I (poke) am doing a cooking book as my final year project, and what would be better way to force myself to do it, than cooking blog?

I won't be posting all my recipes to here, since I don't want to reveal any parts of my book before publishing it, but I promise there will be lots of nice -and easy- recipes!


This is our first dish!

It's called mozzarella- aubergine stacks with tomato sauce! I served some mushroom-risotto and green salad as the side dishes.

Ingredients!

2 large aubergines

olive oil for brushing

sea salt and grounded black pepper

1 bunch of flat leaf parsley, finely chopped!

3 cloves of garlic, also finely chopped!

1 lemon, zest of

4 balls of mozzarella (100g)

Tomato Sauce:

1tbsp olive oil

1 Shallot, finely chopped

1 small chili, deseeded and chopped

8 ripe tomatoes

Pinch on sugar!

2tbsp chopped fresh basil

1.Preheat the oven to 180C

2.Slice the aubergine and brush with olive oil, season lightly with salt and pepper, soften the aubergine on the hot pan, side by side. It takes about 3 minutes per side!

3.Let's make the gremolata! mix together the parsley, garlic, lemon zest and rosemary!

4.Cut the mozzarella into slices, divide the mozzarella and aubergine into portions by making towers out of the slices! Put some gremoulata, salt and pepper between every layer.

5.Bake the stacks in the oven for about 15 minutes, until the mozzarella starts to melt!

6, meanwhile, make the sauce by frying some oil, adding the shallot, chili and garlic, saúte for 5 minutes and add the rest of the ingrendients and cook for about 10 minutes until you have thick and nice sauce! if you want, you can make it into purée by running it into a blender

7. serve with green salad and rice/risotto

This recipe is semi-easy and vegetarian!
